More recently California and the other border states have added further layers of influence to this highly evolved cuisine.We are committed to using the best quality fresh ingredients . We use a traditional local butcher, Hedgers of St Dunstans (close enough to make deliveries on foot), and we use Dumbrells of Canterbury for all our fruit and vegetables.We make our salsas and guacamole every day, with the best fresh avocados and cherry tomatoes. We fry our tortilla chips daily for maximum crispness, and use farmhouse vintage cheddar for our nachos.The entire menu is prepared in our kitchen from scratch using the best fresh ingredients. We make our margaritas with freshly squeezed lime juice. We use a wide range of genuine Mexican chillies, from: mild and fruity ancho , pasilla and mulato, smoky hot chilpotles, to the phenomenally hot habaneros.
